* 1 1/2 lb. smoked cod or haddock fillets, skinned and cubed
* 1 Tbsp. olive oil
* 1 small onion, chopped
* 2 cloves garlic, crushed
* 1 large red bell pepper, chopped
* 6 oz. mushrooms, sliced
* 1 tsp. chili powder
* 11 oz. risotto
* 4 c. fish or chicken stock
* salt and pepper, to taste
* Garnish (optional): fresh dill sprigs
1. Heat oil in a pan. Add onion, garlic, pepper, mushrooms and chili powder. Reduce heat, cover and cook for 3-4 min.
2. Add risotto, stock and seasoning. Bring to the boil, cover and simmer for 15-20 min.
3. Add fish. Cover and simmer for another 5 min, adding extra stock if necessary.
4. Serve immediately. Garnish with fresh dill, if desired.
