Cheddar Crusted Florida Mullet

What you need:

+ 1 large egg
+ 1 Tbsp. water
+ 1 c. prepared Italian dressing
+ 1 1/2 c. Cheddar cheese crackers, crushed
+ 4 (6-oz.) Florida mullet fillets
+ 2 Tbsp. olive oil
+ 1/4 tsp. cayenne pepper
What to do:
1. Dry fillets with absorbent paper.
2. Place Italian dressing and crushed crackers in separate shallow dishes.
3. Dip fillets in dressing to coat and then dredge in cheese cracker crumbs. Place fillets on well-greased cookie sheet. Drizzle olive oil over breaded fillets then sprinkle with cayenne and paprika.
4. Bake at 400°F for 10 to 12 min. until browned and fish flakes easily with a fork. Serve immediately.
