Crisp Fish Carbonara

What you need:

1 lb. skate, cod or haddock fillets, skinned and cubed
1 jar ready-prepared carbonara sauce
8 oz. pasta shapes, cooked
2 tsp. olive oil
2 Tbsp. dry breadcrumbs
1 Tbsp. fresh chopped parsley
1 Tbsp. parmesan cheese, grated
What to do:
1. Pour the sauce into a saucepan and heat for 3 min. Add the fish and cook for 4-5 min.
2. Heat the oil in a frying pan and gently cook the breadcrumbs until golden brown. Remove from the heat and add the parsley and parmesan.
3. Mix together the pasta and sauce and serve sprinkled with the breadcrumb mixture.
4. Garnish with the parsley.
5. Serve with tomato and onion salad.
