Crab Cakes

What you need:

8 oz. mixed crab meat
8 oz. potatoes, cooked and mashed
salt and black pepper
1/2 of a small onion, grated
1 Tbsp. fresh chopped parsley
pinch cayenne
1 Tbsp. lemon juice
2 eggs, beaten
flour
2 oz. dry breadcrumbs
1 oz. oatmeal
oil, for shallow frying
lemon wedges for garnish
What to do:
1. Mix together potatoes, crabmeat, seasoning, onion, parsley, cayenne and lemon juice.
2. Bind together with half of the beaten egg, and shape into 9 cakes, using floured hands.
3. Mix breadcrumbs and oatmeal together. Dip the cakes in beaten egg and coat with the breadcrumbs mixture.
4. Shallow fry in hot oil for 4-6 min., turning once.
5. Garnish and serve with broccoli and boiled new potatoes
