Shrimp Fettuccine with Zucchini

What you need:

1-1/2 lb. Florida shrimp, peeled and deveined
2 Tbsp. olive oil
2 c. Florida zucchini, sliced
2 c. Florida yellow squash, chopped
4 c. cooked fettuccine
2 Tbsp. butter
1 Tbsp. dried leaf oregano
1/2 c. grated Parmesan cheese
What to do:
1. In a large skillet, sauté shrimp in olive oil over medium high heat for 3 to 4 min. on each side until opaque. Remove shrimp to a platter and keep warm.
2. Add zucchini and yellow squash to the pan and sauté until tender and lightly browned. Add the shrimp, fettuccine, butter and oregano to the squash and mix well. Heat through. Add Parmesan cheese and serve immediately.
