Herb Potato Crusted Fried Mullet

What you need:

1 Florida egg, beaten
1 Tbsp. water
salt to taste
1/4 tsp. cayenne pepper
1 c. mashed potato flakes
1 envelope (7/10-oz.) Italian salad dressing mix
1 Tbsp. dried parsley flakes
4 - (6 oz.) Florida mullet fillets
1 c. vegetable oil
What to do:
1. Combine egg, water, salt and pepper in a shallow dish.
2. Combine potato flakes, Italian dressing and parsley flakes in a separate shallow dish. Dip fillets into egg wash then in potato mixture to coat.
3. In a deep pan, cook the fillets in 1 inch of oil at 375°F on a deep-fat thermometer for 2 to 4 min., browning on each side. Drain on absorbent paper.
