Fried Florida Mullet Fingers

What you need:

2 lbs. Florida mullet fillets
1 tsp. salt
1/4 tsp. pepper
1/2 c. all-purpose flour
1 c. yellow cornmeal
2 tsp. cayenne pepper
Florida lemon slices
canola oil for frying
What to do:
1. Heat oil to 375°F in deep fryer or deep saucepan. Cut fillets into 4-to-5-in. strips.
2. Combine salt, pepper, flour, cornmeal and cayenne; mix well. Coat fish with mixture. Deep fry fish in hot oil for 4-5 min. until fish is golden brown. Drain on paper towel and serve with lemon slices.
