Herring Fries

What you need:

1 lb.( 8 oz.) herring fillets
flour for dusting
2 eggs, beaten
3 Tbsp. milk
salt and black pepper
1/2 c. porridge oats
1/2 tsp. dry mustard powder
orange wedges and parsley, to garnish
What to do:
1. Preheat oil 360°F.
2. Cut the fillets into small to medium sized pieces and dust with flour.
3. Beat eggs, milk and seasoning together.
4. Mix oats and mustard together.
5. Dip herring in egg mixture and coat in oats.
6. Deep fry in batches until golden brown, about 4-5 min. Drain well on absorbent kitchen paper.
7. Garnish with orange slices and
parsley.
