Fish Hotpot

What you need:

4 1/2 oz. cod or coley in parsley sauce portion
1/4 c. onion, chopped
2 small carrots, peeled and diced
1 small potato, peeled and diced
bay leaf
1 1/4 c. hot water
2 oz. broccoli flowerets
1 small tomato, skinned, deseeded and chopped
What to do:
1. Place the onions, carrots, potato and bayleaf into a large saucepan.
2. Add the water, cover and simmer for 20 min., stirring occasionally.
3. Add the broccoli, cover and cook for a further 5 -7 min., add the tomato.
4. Meanwhile cook the fish according to the packet instructions, check for bones and set aside.
5. Place all the ingredients into a large bowl. Mash using a potato masher according to the consistency required for your child, and serve.

A quick and easy recipe to make for babies and can be frozen in ice cube trays or small plastic containers for up to 2 months, but remember to defrost overnight in the fridge before use, or heat thoroughly from frozen.

This recipe is suitable for babies between 6-9 months or toddlers.
