Fish Globes

What you need:

12 oz. whiting or coley fillets, skinned and finely chopped
3/4 lb. potatoes, cooked and mashed
2 Tbsp. milk
salt and black pepper
2 eggs
4 Tbsp. flour
8 oz. fresh wholemeal breadcrumbs
3 Tbsp. fresh chopped parsley
2/3 c. oil
lime wedges, to garnish
What to do:
1. In a large bowl combine the fish, potatoes, milk and seasoning.
2. Divide the mixture into 12 -15 portions. Dust hands well with flour and shape into globes.
3. Mix together the breadcrumbs and parsley. Coat the fish globes in egg and then the breadcrumb mixture.
4. Chill the fish globes in the fridge for about 30 min.
5. Heat the oil in a deep frying pan and fry the fish for 6-8 min. or until golden brown.
6. Serve with tomato sauce.
