Crunchy Topped Cod

What you need:

4 (6 oz.EACH) cod or coley steaks
4 Tbsp. lemon juice
1/2 c. wholemeal breadcrumbs, toasted
2 oz. butter or margarine
4 tsp. wholegrain mustard
salt and freshly ground black pepper
fresh chopped parsley, to garnish
What to do:
1. Preheat oven to 375°F.
2. Remove center bones from each of the cod steaks.
3. Sprinkle the steaks with lemon juice and place in an ovenproof dish.
4. Mix the breadcrumbs, butter or margarine, mustard and seasoning together and spoon over the fish.
5. Bake for 20-25 min.
6. Garnish and serve with zucchini and new potatoes.
