Crispy Bread Topped Fish Pie

What you need:

1 lb. coley or haddock fillet, skinned
8 oz. cooked, peeled prawns
2 Tbsp. oil
1 onion, chopped
3 oz. mushrooms, sliced
1 1/2 c. cheese sauce
7 oz. can sweet corn
bunch fresh parsley, chopped
salt and black pepper
5 slices bread
2 tsp. butter
What to do:
1. Preheat the oven to 400°F.
2. Heat the oil in a large pan. Add the onion and mushrooms. Cook for 2-3 min.
3. Add the cheese sauce and simmer for 2-3 min. until hot. Add the fish, prawns, sweet corn, herbs and seasoning.
4. Spread the bread slices with butter and cut into triangles.
5. Spoon the fish mixture into an (2 pint) ovenproof dish. Arrange the bread triangles on top.
6. Cook uncovered for 35-40 min. Serve with a crisp, green salad.
