Aromatic Mackerel with Chickpeas

What you need:

1 lb. mackerel fillets cut in two, crosswise
1 can chick-peas, drained

Marinade:
2 tsp. curry powder or paste
2 cloves garlic, crushed
salt and black pepper
3 1/2 Tbsp. water
2 Tbsp. sunflower oil
2 in. piece fresh root ginger, finely chopped
parsley or coriander to garnish
What to do:
1. Preheat the oven to 375°F
Lay the fish into a shallow dish.
2. Mix together the marinade ingredients and pour over the fillets. Cover and chill for 15-20 min.
3. Spoon the chickpeas into a lightly greased ovenproof dish and lay the fillets on top. Spoon over any remaining marinade mixture.
4. Cover with foil and cook for 15-20 min. Remove the foil and cook for a further 10 min.
5. Garnish and serve with basmati rice and a selection of chutneys, relishes, mint yogurt and naan bread.
