Apple and Marmalade Mackerel

What you need:

2 (8 oz. EA) whole mackerel or herring, cleaned, heads and tails removed
1 large dessert apple, cored and diced
4 Tbsp. water
3 Tbsp. thick cut marmalade
1 Tbsp. whisky
What to do:
1. Preheat the grill
2. Place the apple and water into a saucepan. Bring to a boil and simmer for 3-4 min. Stir in the marmalade and whisky.
3. Grill the mackerel for 6-8 min. each side, brushing with the apple-marmalade sauce.
4. Pour over the remaining sauce and serve with seasonal vegetables.
