White Fish with Spicy Pineapple Glaze

What you need:

1/2 c. pineapple preserves
2 Tbsp. rice wine vinegar
2 tsp. fresh minced ginger root
2 cloves garlic, minced
3/4 tsp. salt
1/4 tsp. cayenne pepper
4 fresh or frozen red snapper, perch, rockfish, branzino, or orange roughy fillets (6 oz. each), thawed
3 tsp. olive oil
What to do:
1. For glaze, in a small bowl, combine the preserves, vinegar, ginger, garlic, 1/2 tsp. salt and cayenne; set aside.
2. Place fillets on a broiler pan coated with cooking spray. Brush both sides of fillets with oil; sprinkle with remaining salt.
3. Broil 4-6 in. from the heat for 5 min.. Brush with half of the glaze. Broil 5-7 min. longer or until fish flakes easily with a fork. Brush with remaining glaze.
