Sweet & Spicy Catfish over Seafood Jambalaya

What you need:

6 U.S. Farm-Raised catfish fillets
3 oz. shrimp, peeled
3 oz. calamari, sliced
6 oz. sea scallops
12 mussels
12 fresh clams
8 oz. fresh chorizo sausage
1 c. finely chopped onion
1/2 c. yellow pepper
1/2 c. celery
1 1/2 tsp. garlic
1 c. tomatoes, peeled, seeded and chopped
2 small bay leaves
1 tsp. thyme
1 Tbsp. green onions
1 Tbsp. parsley
1/2 c. brown sugar
2 Tbsp. vegetable oil
1 qt. chicken broth, canned
1 1/2 c. long grain white rice
What to do:
1. Reserve 1 Tbsp. of the Cajun Spice Mix; combine the remainder with brown sugar; rub catfish with the seasoning. Cover and refrigerate at least 30 min.
2. In a heavy pot, heat 1 Tbsp. of the vegetable oil over medium-high heat. Crumble the sausage into the pot; cook, stirring, until browned. Add onion, bell pepper, celery, garlic, and reserved Cajun Spice Mix. Cook until vegetables are softened, about 3 min. Add stock, rice, tomatoes, bay leaves, and thyme. Bring to a boil; reduce heat to medium-low; simmer, covered, until rice is almost softened, about 10 min.
3. Meanwhile, in a skillet, heat remaining 1 Tbsp. vegetable oil; sear the catfish, service side down, until browned, about 3 min. Turn; reduce heat to low, cover and cook until just cooked through, about 4 min.
4. Add shrimp, calamari, scallops, mussels and clams to the rice mixture. Cook until mussels and clams open, 3 to 5 min. Discard bay leaves and any mussels or clams that do not open. Stir in green onions and parsley.
5. Spoon jambalaya onto serving plates. Top each serving with a catfish fillet.

Cajun Spice Mix: Combine 2-1/2 Tbsp. Spanish paprika, 2 Tbsp. each salt and granulated garlic, 1 Tbsp. each black pepper, granulated onion, ground red pepper, dried oregano and dried thyme. Yield: about 3/4 c. (or substitue a prepared Cajun spice blend)
