Salmon Seared Tagliatelle

What you need:

1 lb. tagliatelle or fettucine
1 Tbsp. macadamia oil
1/2 c. macadamias
1 1/4 lb. mixed seafood such as salmon, scallops, raw shrimp (peeled), trout

Salsa Verde:
1 c. fresh coriander (cilantro)
1/2 c. parsley
1 Tbsp. capers
1/4 c. madadamia oil
2 Tbsp. lime juice
2 Tbsp. macadamias
ground pepper
What to do:
1. Bring a large saucepan of water to a boil and cook pasta according to package directions.
2. Meanwhile, combine all salsa verde ingredients in a blender and, using the pulse button, process to a coarse puree.
3. Heat a non-stick pan or grill pan to high, add seafood and macadamias and cook, stirring occasionally, 2-3 min. or until seafood is just cooked (fish should still be pink inside).
4. To serve, drain pasta and toss through a little of the salsa verde. Place pasta on plates, top with seafood and macadamias, and spoon over the remaining salsa verde.

Pinot Grigio-Pinot Bianco, Blush / Rosé, Chablis
