Blueberry Shrimp Salad with Lemon Vinaigrette

What you need:

3/4 lb. medium boiled or grilled shrimp (about 20)
1 c. fresh blueberries
1/2 c. walnuts
1/2 c. Soybeans (Edamame)
5 oz. mixed salad greens
2 oz. feta cheese

Lemon Vinaigrette:
1/4 c. vegetable oil
2 Tbsp. lemon juice
1 tsp. sugar
1/8 tsp. salt
1/8 tsp. ground pepper
1/8 tsp. ground red pepper
What to do:
1. In a large salad bowl, toss cooked shrimp, blueberries, walnut pieces, edamame or peas and salad greens. Evenly divide salad onto six plates; drizzle with Lemon Vinaigrette. Sprinkle cheese around edges of salad.

Lemon Vinaigrette:
1. In a small mixing bowl, whisk vegetable oil, lemon juice, sugar, salt coarsely ground black pepper, and ground red pepper.
Serve with:
Crusty fresh rolls from the bakery.
