Baked Cod Fillet with Herbed Crust

What you need:

1 slice bread OR roll, cut into cubes
1 tsp. parsley, chopped
1 tsp. dill, chopped
1/4 clove garlic, minced
1 plum tomato, seeded and chopped
1 egg, beaten
1 Tbsp. butter, melted
6 oz. cod fillet
salt and pepper, to taste
What to do:
1. Place the bread, parsley, dill, garlic and tomato in a bowl, season with salt and black pepper. Add the egg and butter and mix in well.
2. Brush the cod fillet with melted butter, season with salt and pepper. Arrange a portion of the bread mixture on top and secure it in place.
3. Place into a pre-heated 400°F oven and bake for around 15 min, or until the fish flakes.
4. Serve with vegetables or salad and crusty bread.
