Lobster Carambola Citrus Salad

What you need:

1 c. Florida orange juice
2 Tbsp. Florida honey
1/4 c. canola oil
1 tsp. salt
4 medium Florida carambolas (starfruit), sliced
1 c. Florida orange sections
1 c. Florida grapefruit sections
1 lb. Florida cooked lobster tail meat, sliced
1 c. canned black beans, rinsed and drained
Florida salad greens, chilled
What to do:
1. For dressing, bring orange juice to a boil in a saucepan, reducing liquid by 1/2.
2. Cool in a small bowl. Whisk orange juice with honey, oil and salt. Set aside.
3. On individual plates, arrange carambola slices, orange and grapefruit sections, lobster and black beans on salad greens.
4. Drizzle with orange salad dressing and serve.
