Crispy Herring with Spinach and Pinenuts

What you need:

1 lb. herring fillets
2 Tbsp. olive oil
1 small onion, chopped
2 oz. frozen chopped spinach, slightly thawed
1/2 c. fresh breadcrumbs
2 Tbsp. parmesan cheese, grated
salt and pepper, to taste
1 Tbsp. pine nuts, lightly chopped
What to do:
1. Preheat oven to 425°F.
2. Heat oil in a pan. Add onion and cook 2-3 min. Add spinach, breadcrumbs and cheese. Cook 1 min. and set aside to cool.
3. Place each fillet on a chopping board skin side down and season with salt and pepper. Spoon stuffing over each fish, roll up and secure with a cocktail stick, if necessary.
4. Bake 10-15 min. Garnish with pinenuts and serve with a green salad and Ciabatta or pita bread.
