Squid with Spinach and Mushrooms

What you need:

1 1/2 lb. squid, skinned, cleaned and sliced
1 lb. long fusilli pasta
1 stick butter
4 Tbsp. olive oil
12 oz. button mushrooms
2 cloves garlic, crushed
12 oz. baby spinach
salt and pepper, to taste
Garnish: lemon wedges and parsley leaves
What to do:
1. Cook pasta according to the packet instructions. Drain.
2. Gently heat butter and olive oil in a large frying pan. Sauté mushrooms until golden brown. Add squid and garlic and heat through.
3. Add drained pasta to the pan and stir well. Add spinach, toss until the spinach wilts.
4. Season and garnish with lemon and parsley. Serve immediately with salad and crusty bread.
