Smoked Fish Omelet

What you need:

12 oz. smoked haddock or cod fillet, skinned and cubed
2 Tbsp. sunflower oil
1 small onion, chopped
1 zucchini, cubed
10 oz. canned potatoes, halved
2 eggs, beaten
4 Tbsp. lowfat cream cheese, softened
What to do:
1. Preheat broiler. Heat oil in a non-stick frying pan. Add onion, zucchini and potatoes. Cook for 2-3 min.
2. In a small bowl, combine eggs and low fat soft cheese.
3. Add fish to cooked vegetables and cook 4-5 min. on low heat. Add egg mixture and cook for 3-4 min.
4. When lightly set, place pan under broiler and cook 3-4 min, until omelette is set and golden brown.
5. Serve with crusty bread and a green salad.
