Grilled Fish with Orange and Tarragon

What you need:

1 lb. skate, haddock or cod fillets, skinned
1/3 c. orange juice
2 Tbsp. butter, melted
1 Tbsp. tarragon, chopped
salt and pepper, to taste
What to do:
1. Preheat grill.
2. Mix together juice, butter, tarragon, salt and pepper. Brush fish with the juice mixture.
3. Grill fish for 8-10 min, turning once and basting with any remaining juice.
4. Serve with char-grilled vegetables.
