Spicy Fish Risotto

What you need:

1 1/2 lb. smoked cod or haddock fillets, skinned and cubed
1 Tbsp. olive oil
1 small onion, chopped
2 cloves garlic, crushed
1 large red bell pepper, chopped
6 oz. mushrooms, sliced
1 tsp. chili powder
11 oz. risotto
4 c. fish or chicken stock
salt and pepper, to taste
Garnish (optional): fresh dill sprigs
What to do:
1. Heat oil in a pan. Add onion, garlic, pepper, mushrooms and chili powder. Reduce heat, cover and cook for 3-4 min.
2. Add risotto, stock and seasoning. Bring to the boil, cover and simmer for 15-20 min.
3. Add fish. Cover and simmer for another 5 min, adding extra stock if necessary.
4. Serve immediately. Garnish with fresh dill, if desired.
