Smoked Halibut Pinwheels

What you need:

4 slices smoked halibut (fresh or defrosted)
6 oz. cooked shrimp, peeled and finely chopped
4 oz. lowfat cream cheese, softened
3 Tbsp. mayonnaise
1 in. fresh ginger root, peeled and finely chopped
few drops lime juice
salt and pepper, to taste
Garnish (optional): fresh dill
What to do:
1. Place all ingredients except halibut in a small bowl and mix gently to combine.
2. Lay halibut slices on a cutting board and spread the mixture evenly over each slice. Roll up, wrap in cling film and chill for 2-3 hrs.
3. Slice the halibut rolls and garnish with dill. Serve as hors d'oeuvres, or part of a starter.
