Halibut Steaks with Champagne and Peppercorn Sauce

What you need:

6 oz. halibut steaks (fresh or frozen)
3 Tbsp. butter
5 oz. pink champagne or rose wine
4 Tbsp. créme fraiche
1 tsp. mixed whole peppercorns
1 Tbsp. chives, chopped
salt and fresh ground black pepper, to taste
What to do:
1. Preheat grill.
2. Melt 1 Tbsp. butter in microwave. Place steaks on a grill pan. Drizzle melted butter over steaks and season with salt and pepper.
3. Cook 8-10 min. on grill, turning once.
4. Meanwhile, prepare the sauce: Heat remaining butter in a pan and add champagne. Bring to a boil and reduce the liquid by half. Stir in the cream, seasoning and chives.
5. Arrange halibut steaks on a bed of cooked green and white tagliatelle (or fettucine) and pour sauce over steaks. Serve immediately.
