Grilled Wahoo

What you need:

1 lb. wahoo fillets (fresh or defrosted)
8 oz. tomatoes, peeled and roughly chopped
1/4 cucumber, diced
1 small onion, finely chopped
2 Tbsp. medium sherry (opt.)
2 Tbsp. water
salt and lemon pepper, to taste
Garnish: freshly chopped parsley
What to do:
1. Preheat grill.
2. In medium saucepan, add tomatoes, cucumber, onion, sherry and water and bring to a boil. Reduce heat, cover and simmer for 10-15 min, stirring occasionally, until tomatoes and vegetables are soft. Season with salt and lemon pepper to taste.
3. Place wahoo fillets onto a grill pan and sprinkle with salt and lemon pepper. Cook over a medium heat for 4-5 min, until fish is almost cooked. Turn fish.
4. Divide tomato cucumber mixture, top each fillet and cook for another 1-2 min.
5. Serve hot with corn on the cob and watercress.
