Pollack in Pesto Sauce

What you need:

12 oz. pollack fillets (fresh or defrosted), skinned and cubed
2 Tbsp. pesto sauce
1/2 c. fish broth
salt and pepper, to taste
1 tsp. cornstarch
1 Tbsp. water
Garnish: grated parmesan cheese
What to do:
1. Mix pesto sauce and fish stock together. Pour into a shallow pan and bring to a boil.
2. Reduce heat and add cubed fish. Cover and simmer for 5 min. Salt and pepper to taste.
3. In a small bowl, mix cornstarch with water to form a paste. Add to pesto-based sauce. Simmer uncovered 3-4 min until the sauce thickens, stirring lightly.
4. Spoon the fish and pesto sauce over a bed of pasta. Garnish with the Parmesan cheese and serve.
