Pesto Crusted Fish

What you need:

2 - 6 oz.thick pollack fillets (fresh or defrosted), skinned
2 Tbsp. pesto sauce
3 Tbsp. fresh breadcrumbs
1 Tbsp. lemon juice
2 Tbsp. parmesan cheese, grated
salt and pepper, to taste
What to do:
1. Preheat oven to 400°F,
2. In a small bowl mix pesto, breadcrumbs, lemon juice and cheese together.
3. Place fish on baking sheet and season with salt and pepper. Spread pesto mixture over fish. Spread any remaining mixture around the fish.
4. Bake for 20-25 min. Serve with new potatoes and baby vegetables.
