Fresh Mackerel and Kumquats

What you need:

4 - 12 oz. whole mackerel (fresh or defrosted), cleaned and heads removed
7 oz. kumquats, sliced
salt and pepper, to taste

Tip: If preferred, orange slices may be substituted for kumquats.
What to do:
1. Preheat grill.
2. Make diagonal cuts across the skin of the fish. Fill the cut sections of the skin and the fish cavity with slices of kumquats. Rub some of the remaining kumquats over the skin of the fish for extra flavour. Season with salt and pepper.
3. Cook for 10 min. each side over low heat.
4. Serve with a coucous salad.
