Supersweet Corn Seafood Skillet Clambake

What you need:

4 ears fresh sweet corn, shucked and halved
3 Tbsp. butter or margarine
1 c. chopped onion
1 tsp. minced garlic
1 c. chopped tomato
1 c. chicken broth
1/2 c. dry white wine or water
1/2 tsp. salt
1 dozen cherrystone clams
8 oz. medium raw shrimp
What to do:
1. Scrub clams under cold water. Peel and devein shrimp.
2. In a large saucepot over medium heat, melt butter. Add onion and garlic; cook, stirring occasionally, until tender, about 5 min.
3. Add tomato, broth, wine and salt; bring to a boil.
4. Add corn, clams and shrimp; cook until clams have opened and shrimp is pink, about 5 min.; discard any unopened clams. Stir in chopped parsley, if desired; serve immediately
Serve with:
