Mahi Mahi Fillets with Greek Salsa

What you need:

1 1/2 c. tomatoes, chopped
8 pitted Kalamata olives, quartered
2 Tbsp. Feta cheese with basil and oregano, crumbled
1 1/2 Tbsp. fresh oregano, minced
1 Tbsp. capers, drained
1 lb. Mahi Mahi fillets, or fish fillets
What to do:
1. To make salsa: Combine the first 5 ingredients in a bowl; mix gently but well. Cover and refrigerate about 30 minutes.
2. Arrange fillets on a lightly greased baking sheet; bake at 400ºF for 10 minutes per inch thickness of fish.
3. Top with Greek Salsa.
