Fried Catfish Fingers with Dipping Sauce

What you need:

1 lb. catfish, cut into strips
2 c. white cornmeal
salt and pepper to taste
jar commercial dipping sauce
What to do:
1. Place cornmeal in a shallow dish; season with salt and pepper. Dredge catfish strips in cornmeal mixture, shaking off excess. Set aside on wax paper lined baking sheet.
2. Pour 2" peanut oil into deep fryer; heat to 375°F on a deep frying thermometer. Add catfish strips three at a time; fry for 5 minutes, turn to cook evenly. Serve with sauce.
Serve with:
Collards or turnip greens, fried apple tarts & a jar of prepared Dipping Sauce
Wine pairings:
Chardonnay, Pinot Grigio, Sauvignon Blanc
