Catfish Kabobs with Pineapple Marinade

What you need:

1 lb. catfish, cut in pieces
6 oz. pineapple juice
1 Tbsp. brown sugar
2 tsp. olive oil
1 1/2 c. fresh cubed pineapple
1 1/2 c. peeled orange sections or sliced papaya
What to do:
1. Cut fish into pieces.
2. Place fish in dish with juice, brown sugar and olive oil. Stir to coat. Marinate in refrigerator for 1 hr.
3. Place fish pieces, cubed pineapple, oranges or papaya on skewers. Baste with pineapple marinade.
4. Grill 3 min. per side basting occasionally.
