Seafood Corn Chowder

What you need:

3 slices bacon, diced
1 c. chopped onion
1/3 c. chopped celery
1/2 c. chopped green bell pepper
1/2 c. chopped red bell pepper
1 Tbsp. all-purpose flour
1 can (10 1/2 oz.) low sodium chicken broth
2 c. skim milk
1 can (12 oz.) evaporated skim milk
8 - 12 oz. crab meat or imitation crab meat
2 c. fresh or frozen whole kernel corn
1/2 tsp. black pepper
1/2 tsp. paprika
What to do:
1. Fry diced bacon in large pot until just starting to brown. With a slotted spoon remove bacon pieces and set aside.
2. Add diced onion, celery and green and red pepper pieces to bacon grease. Cook uncovered on moderate heat for 4 to 5 minutes or until vegetables are soft.
3. Add flour to vegetable mixture, cook and stir constantly for 2 minutes. Gradually add chicken broth and bring to a boil. Add milk, evaporated milk, seafood, corn, cooked bacon pieces, black pepper and paprika. Heat, stirring occasionally, 5 minutes or until chowder is hot. Serve
