Seafood Puffs

What you need:

8 oz. cod or haddock fillets, cubed
8 oz. large cooked, peeled prawns
8 oz. packet of ready rolled puff pastry, defrosted
1 egg, beaten
8.75 oz. jar white wine sauce
3 oz. mushrooms, sliced
1 Tbsp. sherry or brandy
What to do:
1. Preheat the oven to 400°F. Cut the pastry into 4-in. squares twisting two diagonal corners and brush with the egg. Bake for 10 min. until cooked.
2. Place the sauce in a pan, add the mushrooms and bring to the boil. Add the white fish and simmer for 3 min. Add the sherry or brandy and the prawns and simmer for a further 3-4 min.
3. Pour the fish and sauce into the pastry puffs and serve with creamed potatoes and vegetables.
