Pan-Fried Fish with Lemon Hollandaise Sauce

What you need:

4 (6 oz. ea.) sole fillets, skinned
2 Tbsp. plain flour
salt and black pepper
1 Tbsp. olive oil
2 Tbsp. butter
8 1/2 oz. jar hollandaise sauce
1-2 Tbsp. lemon juice
fresh chopped parsley, to garnish
What to do:
1. Dip the fish in seasoned flour. Shake off any excess.
2. Heat the oil in a frying pan; add the butter. Cook each fillet for 2-3 min. on each side or until golden brown.
3. Add the hollandaise sauce and lemon juice. Simmer for 2-3 min. Garnish and serve with potatoes and green vegetables.
