Italian Style Smoked Fish

What you need:

1 lb. smoked cod or haddock, skinned and cubed
1 Tbsp. butter or margarine
1 onion, finely chopped
4 oz. button mushrooms, halved
1 tsp. fresh chopped basil
large pinch nutmeg
3 Tbsp. crème fraîche or double cream
1 lb. cooked pasta
fresh basil leaves, to garnish
What to do:
1. Melt the butter in a saucepan, add the onion and cook until soft. Stir in the mushrooms and basil and cook for 1 min.
2. Add the nutmeg and fish, cook for 5-8 min. stirring occasionally. Remove the saucepan from the heat and add crème fraîche or double cream. Stir gently.
3. Serve on a bed of pasta and garnish with the fresh basil leaves.
