Spicy Avocado and Shrimp Cocktails

What you need:

1/4 c. olive oil
1 tsp. minced garlic
3/4 tsp. ground cumin seed
3/4 tsp. salt
1/2 tsp. pepper
2-1/2 Tbsp. lime juice
2 ripe avocados
6 oz. peeled and deveined cooked shrimp
What to do:
1. In a measuring cup, combine oil, pepper, garlic, cumin, salt and lime juice. Set aside.
2. Halve, pit, and peel avocados. Dice 1 1/2 of the avocados; place in a small bowl; toss with 2 Tbsp. of the dressing.
3. Slice remaining avocado half; place sliced avocados and shrimp on opposite sides of a pie plate; coat with remaining dressing.
4. Spoon diced avocados in four martini or wine glasses. Arrange shrimp and avocado slices around the sides of the glasses.
5. Garnish with lettuce leaves and diced tomato, if desired; spoon any remaining dressing over avocados and shrimp.
