Citrus Alaska Sole with a Tahini Drizzle

What you need:

4 Tbsp. orange zest
1/2 c. orange juice
4 Alaska Sole fillets (6 to 8-oz. ea.), fresh or thawed
1/2 c. tahini
1/4 c. finely chopped parsley
2 Tbsp. minced garlic
1/3 c. fresh lemon juice
salt, to taste
1/3 c. water
ground black pepper, to taste
What to do:
1. Add orange zest and orange juice to large zip-top plastic bag. Add Alaska Sole fillets, seal bag and turn several times to coat. Marinate in refrigerator for 15 to 30 min. Remove fillets from marinade; discard marinade.
2. Mix together tahini, parsley, garlic and lemon juice. Add salt to taste; whisk in water.
3. Heat broiler/oven. Season sole fillets with salt and pepper; place on spray-coated broiling pan and broil 5 to 6 in. from heat source for about 5 min., until golden. Cook just until fish is opaque throughout. Drizzle with tahini sauce.
