Steamed Szechwan Alaska Cod

What you need:

4 Alaska Black Cod fillets (6 to 8-oz. each), fresh, thawed or frozen
2 Tbsp. Szechwan (hot) chili paste
2 Tbsp. rice wine or dry sherry
1 Tbsp. sesame oil
1 c. green onions, cut in long shreds
2 Tbsp. sesame seeds
What to do:
1. Rinse any ice glaze from frozen Alaska Cod under cold water; pat dry with paper towel. Blend chili paste, wine and sesame oil. Brush mixture onto cod fillets; top with green onions.
2. Bring 1-in. of water to boil in large pan. Turn off heat and place Chinese bamboo steamer, wire basket or vegetable steamer in pan. Place cod fillets in the steamer and return water to a boil. Cover pan loosely and cook for 8 to 10 min. for frozen cod or 4 to 6 min. for fresh/thawed fish. Cook just until fish is opaque throughout. Garnish with sesame seeds.
